Ingredients for the preparation of coleslaw for the winter

Cooking cabbage salad for the winter:

Step 1: Prepare the cabbage.

Remove the old and gray leaves from the cabbage. Divide the head into four parts. Make a few cuts near the stump and remove it with your hands. Rinse under running water and chop the remaining leaves coarsely.

Step 2: Prepare the carrots.

Peel the carrots from the skin and rinse thoroughly under running water. Grind the vegetable with a coarse grater.

Cut bell pepper in half, make cuts around the tail and remove it along with the core and seeds. Rinse and chop in strips or cut into cubes, I leave this choice at your discretion.

Step 4: Prepare the onion.

As usual, peel the onions and rinse. To make this salad, the onions should be cut into small or medium cubes.

Step 5: Cooking the Salad

Pour all the vegetables into a large deep plate, pan or bowl. Add salt and sugar to them. Stir, it is best with your hands, but do it carefully, you do not need to knead vegetables. Now add the oil and vinegar, mix again. This mixture must be allowed to stand. 1-2 hours.

Step 6: Preserve the salad.

After the required time, put the cabbage salad in pre-sterilized jars. Do not rush to immediately close them with a lid, first cover the jars with the gauze blank and send to the refrigerator for 3 days. And only after the workpiece is infused, remove it from the refrigerator and tightly close the lid.
Take the coleslaw preserved in this way to a cellar or other cool and dark place. Do not forget to put a date. You can try the ready-made salad in 5 days.

Step 7: Serve the coleslaw for the winter.

Serve the coleslaw as a separate dish. I prefer to season it with mayonnaise. Boiled potatoes also go well with this salad.
